Egyptian Spinach (Corchorus olitorius) has a bright green leaf with a soft texture when eaten, and children love it. It loves the heat and should be grown in full sun. It can be germinated from seed and grown in humus-rich soil.

Egyptian Spinach contains beta-carotene, calcium, chlorophyll, folic acid, mucin, pantothenic acid (vitamin B5, vitamin B2, vitamin B6, vitamin E and vitamin K.), and possesses properties thought to aid in colds, blood circulation, healthier skin, liver function, high blood pressure, stomach ulcers, constipation, gastrointestinal illnesses, and many more.

The fresh leaves can be eaten as a salad green or potherb, the dried leaves can be used as tea or as a thickener. When cooked, though the leaves can be gummy, Egyptian spinach is versatile enough to be used anywhere Spinach would be used.
